Beans such as pintos, even out of a can, add substance to this summery taco filling. Goat cheese provides a creamy, rich finish. The cooked squash and tomatoes alone make a great taco filling, but beans add substance. You can use pintos, white beans or black beans, and I was as happy with canned beans as with beans that I’d cooked from scratch, as I don’t use the broth in the filling. My favorite bean to use is a pinto or something like a pinto (such as borlotti beans or Good Mother Stallards). Goat cheese provides a creamy, rich finish.
